VEG FRIED RICE/ VEG POLAO is a very delicious recipe. loaded with fresh vegetables. It is an authentic Bengali dish. It is really easy to make. The VEG FRIED RICE/ VEG POLAO is very popular in any Bengali wedding. You can serve this with any Chicken side dish or dam aloo or even with egg curry.

INGREDIENTS:

(1) Boiled Basmati Rice-250 gm, (2) Chopped Carrot-1/2 Cup, (3) Chopped Bean-1/2 Cup, (4) Chopped Capsicum-1/2 Cup, (5) Green Peas-1/2 Cup, (6) Cashew-1 fist, (7) Raisins-1 fist, (8) Green Cardamom-4-5 Pcs, (9) Cinnamon- 1 Inch, (10) Cloves-4-5 Pcs, (11) Black Peppercorns- 4-5 Pcs, (12) Bay Leaves, (13) Mace- Few Nos, (14) Powdered Sugar- 1/2 Cup or as per your taste, (15) Salt to taste, (16) 2 Tbsp Ghee, (17) Refined Oil, (18) Rose Water-1 Tsp ( Optional ), (19) Garam masala powder-1/2 Tsp.

Making time of  TASTY FRIED RICE/VEG POLAO:

Preparation Time: 20 Minutes.

Cooking Time: 15 Minutes.

Total Time: 35 Minutes.

Step by step making process of  TASTY FRIED RICE/VEG POLAO:

(1) Heat some oil along with some Ghee.

(2) Add the bay leaves, cinnamon Stick, green cardamom, cloves, black peppercorns, mac and sauté for a minute.

(3) Add the cashew and raisins and fry them.

(4) Now add the carrots, capsicum, beans, green peas and fry them on high flame. Do not over cook the veggies.

(5) Then add salt to taste, powdered sugar and mix.

(6) Add the boiled basmati rice and gently mix it with the veggies nicely.

(7) Now sprinkle some garam masala and rose water and cover it. Give it a standing time of 10 minutes.

(8) Remove the lid and give it a gentle mix.

(9) Now your TASTY FRIED RICE/VEG POLAO is ready to serve.
