How to make BENGALI STYLE CRISPY & YUMMY PUCHKA/GOLGAPPA ( বাড়িতে খুব সহজ উপায় এ মুচমুচে ফুচকা তৈরি )at home by Indian Food Masti

FUCHKA is a very famous street food in Kolkata. Fuchka is basically a version of panipuri, golgappa or gupchup. The Kolkata style Fuchka are easy to make and super delicious in taste. It is very spicy and yummy street food that is loved by all generation in all over India. Fuchka is different from panipuri, golgappa or gupchup. The difference between Fuchka and the other variation is the filling and the sour water. Mainly we use black chickpeas and potatoes as a filling for fuchka and roasted cumin powder enhances the flavor and gives the Bengali touch in this filling. You can also add other ingredients if you like. You can add onions, chopped cucumber and other spices if you want. It's all up to your choice. It's wroth trying this lip-smacking fuchkas at home. Give this lip-smacking fuchkas a try and make this in a weekends and enjoy it with your family.

INGREDIENTS:

For the Fuchka:
   (1) Semolina 1.5 Cup, (2) Wheat Flour 1 Cup, (3) Water as required, (4) Oil for frying.

For The potato Mixture ( Use according to your taste): (1) 2 Medium sized potato boiled and mashed, (2) Roasted cumin powder 1Tsp,  (3) Chat masala 1 Tsp, (4) Red chilli powder 1 Tsp, (5) Salt to taste, (6) Chopped coriander leaves 1 tbsp, (7) Chopped green chilli 2 pcs, (8) Bengal gram soaked 1 Cup.

For the Tamarind water: (1) Tamarind pulp 1 Cup, (2) Lemon juice 1 Tsp, (3) Chopped coriander leaves 1 Tsp, (4) Roasted cumin powder 1/2 Tsp, (5) Chat masala 1/2 Tsp, (6) Red chilli powder 1/2 Tsp, (7) Salt to taste.  

Making time of CRISPY & YUMMY FUCHKA:
Preparation Time: 30 Minutes.
Cooking Time: 30 Minutes.
Total Time: 60 Minutes.

Step by step making process of CRISPY & YUMMY FUCHKA:
(1) Take a bowl and add the semolina , wheat flour and mix it. 


(2) Add water gradually and knead a stiff dough.


(3) Cover the dough and rest it for 30 minutes - 1 hr.


(4) Make small balls of the dough.


(5) Take a rolling board and place the ball over it. Press it a little. Sprinkle some dry flour over it and roll out the dough into  a large roti like shape. Do not roll it too thin or too thick. 



(6) Using a cookie cutter/glass/bowl cut small round puri. Don't discard the extra part, knead it again and use it to make more fuchkas. 


(7) Heat some oil in a wok. Drop the fuchka one by one. Keep the flame high when you drop it and then slow down the flame while frying. When the fuchka puffs up flip it and splash the oil over it till it become nice golden and crispy.


(8) Remove it from oil and keep aside. You can also store it in an air tight container. 


Making the potato mixture:

Take a bowl and add the boiled mashed potato, salt to taste, roasted cumin powder, chat masala, red chilli powder, chopped green chilli, chopped coriander leaves, Bengal gram and mix all the thing together nicely and the potato mixture is ready.




Making the tamarind water:

Take some water in a bowl. Now add the tamarind pulp, salt to taste, red chilli powder, chat masala, roasted cumin powder, chopped coriander leaves, and mix it and the tamarind water is ready.



Assembling and serving fuchka:

(1) Take a fuchka using your thumb poke a hole on the thinner side of the fuchka.


(2) Add the potato filling into it and dip the fuchka in the tamarind water or pour the water using a spoon. 


Serve it immediately.
