SPICY PABDA MACHER TEL JHAL is a very delicious and a traditional dish of Bengal. Bengalis loves all kind of fish. We say 'Mache Vate Bangali '. Pabda is a very popular fish among the Bengalis. The scientific name of Pabda is Ompok Pabda. So Pabda is not a Bengali name. It is nice to know this because there are other fish common to the Bengali plate which do not actually have Bengali names but are known by their scientific names like TILAPIA. Bengalis get singled out for their love for fish because Bengalis have curved out an identity out of it. In Bengal fish has ceased to be just a food item and become part of their culture. It's considered auspicious in wedding and sometimes offered to deities as a mandatory offering. Fish is the leanest and best protein in the non vegetarian category and safe for heart. For Bengalis living around the world this fish is the taste of home. This particular fish is regular at Bengali households and I have grown up eating it. It is a very flavourful dish for any get-together or there is a guest who loves fish. SPICY PABDA MACHER TEL JHAL is a Bengali fish curry and requires no onion and no garlic. Fresh coriander leaves are the key for this fragrant curry and it brings out the flavour of the fish. We need minimum spices to make this delicious dish. You can serve this lip-smacking dish with steamed rice along with some lemon wedges.

INGREDIENTS:

For Marination:
 (1) Pabda fish 4 pcs, (2) 1/2 Teaspoon turmeric powder, (3) Salt to taste.

For the Gravy: (1) 1/2 Teaspoon turmeric powder, (2) 1 Teaspoon red chilli powder, (3) 1/2 Teaspoon cumin powder, (4) 1/2 Teaspoon nigella seed, (5) 2 Slit green chilli, (6) 1 Teaspoon mustard paste, (7) 1/2 Teaspoon ginger paste, (8) 1 Medium sized tomato chopped, (9) 1 Teaspoon chopped coriander leaves, (10) Salt to taste, (11) Mustard oil, (12) Water as required.

Making time of SPICY PABDA MACHER TEL JHAL:

Preparation Time: 10 Minutes.
Cooking Time: 15 Minutes.
Total Time: 25 Minutes.

Step by step making process of  SPICY PABDA MACHER TEL JHAL:
(1) Firstly take the fish and add the turmeric powder and some salt, coat it nicely and marinate the fish for 10 minutes. 

(2) Now take a bowl and add the red chilli powder, turmeric powder, cumin powder, ginger paste, mustard paste, some water and make a paste and keep aside.


(3) Heat some mustard oil in a pan. Add the fish one by one. Fry it from both the side nicely. Be very gentle while flapping the fish as it is very soft. Otherwise it will break. After frying keep it aside.


(4) In the same oil add the nigella seed and 2 slit green chilli and sauté for a minute. 


(5) Then add the chopped tomato and fry it till it become mushy.


(6) When the tomato became mushy add the spice paste into it and fry for a minute.


(7) Add some salt to taste and mix. Add 1/2 cup of water or according to how much gravy you want & stir.


(8) Now add the fried fish into it one by one.


(9) Add the chopped coriander leaves and let the fish cook for 2-5 minutes.


 
Now your  SPICY PABDA MACHER TEL JHAL is ready to serve with hot steamed rice.
