How to make CRISPY MOONG DAL KI KACHORI ( মুচমুচে মুগ ডালের কচুরি) at home by Indian Food Masti

MOONG DAL KI KACHORI is a very delicious Indian recipe. Kachori is a spicy deep-fried snack in India. It is a very popular lip-smacking dish. Kachoris were popular in old India , even before Samosas gained popularity. This recipe must look tough but trust me it is really easy to make. You can make this dish easily at home. It is very popular in North India and also loved by so many people. In this recipe we stuff the kachori with spicy moong dal filling. It is really a flavourful dish to try this Diwali. Every Diwali or any get-together we make this kachori and trust me it is loved by all the guests. The kachori we make is deep-fried but you can also bake it if you want. The kachori has a crisp crust. To make a perfect MOONG DAL KI KACHORI is to deep-fry the kachori in low flame. You need to be very patient to make a perfect kachori. Like MOONG DAL KI KACHORI there are several other variants like Raj Kachori, Onion Kachori, Aloo Ki Kachori and many more. In this festive season you can make this amazing lip-smacking dish for your friends and family. You can make this as a party or get-together snack. Serve it hot with any chutney or you can serve it with a simple potato curry with a dash of tamarind chutney and I am sure your guest will love it.

For The Dough:- (1) 2Cups All Purpose Flour, (2) 4tbsp Oil/Ghee, (3) Salt To Taste, (4) Water As Required.

For The Stuffing:- (1) 1/2 Cup Moong Dal, (2) 4 Tbsp Gram Flour,(3) 1/2 Tsp Turmeric Powder, (4) 1 Tsp Red Chilli Powder, (5) 1 Tsp Coriander Powder, (6) 1 Tsp Cumin Powder, (7) 1 Tsp Amchur Powder ( Dry Mango Powder), (8) 1/2 Tsp Asafoetida, (9) Salt To Taste, (10) Oil, (11) 1 Tsp Chopped Green Chilli.

Making time of Dough:
Preparation Time: 5 Minutes.
Resting Time: 30 Minutes.
Total Time: 35 Minutes.

Making of Dough: (1) Take the all purpose flour or maida in a bowl. Add pinch of salt and mix. Add the oil of ghee mix it with the flour nicely. The flour should be take on the texture of wet sand.

(2) Add the water as required and mix till the dough comes together. Make a semi tight dough and rest it for 30 mnts.

Making time of the stuffing:
Preparation Time: 5 Minutes ( Excluding Moong dal soaking time ).
Cooking Time: 15 Minutes.
Total Time: 20 Minutes.

Making the stuffing: (1) Wash the moong dal and soak it in fresh water for minimum 4-5 hrs. Drain the excess water and transfer it to a grinding jar and grand it.

(3) Heat some oil in a pan. Add the gram flour and roast it for 2-3 mnts.

(4) Add chopped green chilli, red chilli powder, turmeric powder, coriander powder, cumin powder, amchur powder and asafetida and mix all the things nicely. 

(5) Add salt to taste and mix.

(6) Now add the grounded moong dal mix and cook for until the water evaporates from the moong dal. 

(7) Let it cool down and shape the mixture to small sized balls. 

Making time of the Kachori:
Preparation Time: 30 Minutes.
Cooking Time: 30 Minutes.
Total Time: 60 Minutes.

Making the Kachori: (1) Take a portion of the dough and flatten it with your fingers. Shaping it into a small size bowl. Keep the center bit thicker than the sides.

(2) Now place the moong dal stuffing ball on the dough. Bring the edges of the dough together and join them at the center. Pinch off the excess dough and give it a round shape using your palms.

(3) Now flatten the balls with hands into  a semi thick disc.

(4) Heat some oil in a wok. Deep fry the kachori on a low flame until it become crispy and golden brown.  

Your CRISPY MOONG DAL KI KACHORI is ready to serve.
