NAVARATAN KORMA (নবরত্ন কোর্মা)/MIXED VEG CURRY (নিরামিষ নবরত্ন কোর্মা)is a very rich creamy and flavourful dish that literally translates to nine-gem curry. 'Nav' means 'nine' and 'Ratan' means 'gem'. The 'gems' are the fruits, vegetables, paneer and nuts that we use to make the curry. In Indian History there were nine courtiers of the Mughal Emperor Akbar. NAVARATAN was a term applied to that group of nine extraordinary people. This dish is a tribute to those NAVARATAN or nine gems or nine courtiers of Emperor Akbar. This dish has a royal feel in it. The base of the curry is made with cashew nuts, poppy seed, and melon seed. Some people use almonds, if you have almonds you can also use it. This is a pure veg recipe as we are not using any onion or garlic in it. There is also a non-vegetarian versions of preparing NAVARATAN KORMA/MIXED VEG CURRY. We make this aromatic, flavourful and mildly sweet vegetable curry with nine ingredients. In this recipe we also use nine different whole spices for tempering the oil. It seemed to be a very time consuming recipe. But it's not true . It is very easy to make and yet it is a royal, rich and lip-smacking dish. You can make this in any special occasion or you are expecting guests at your home. You can have this with Roti, Parathas or any kind of Polao.

Vegetables: (1) 1 medium sized Potato cut into small chunks, (2) 1 small Capsicum cut into cubes, (3) 6-7 Cauliflower Florets, (4) 1 cup French Beans, (5) 1 carrot cut into small chunks, (6) 1 medium sized tomato cut into small chunks. (7) 1/2 cup Sweet Corn, (8) 1/2 cup Green Peas, (9) 150gm Paneer cut into cubes

For Gravy: (1) 10-12 Cashew Nuts, (2) 1tbsp Poppy Seed, (3) 1tbsp Melon Seed, (4) 1/2tsp Coriander Powder, (5) 1/2tsp Cumin Powder, (6) 1/2tsp Black Pepper Powder, 1/2tsp Garam Masala Powder, (7) 3 Green Chillies, (8) 2inch Ginger.

For Tempering Oil: (1) 1 Bay Leaf, (2) 1 Dry Red Chilli Powder, (3) 3-4 Green Cardamoms, (4) 2-3 strands of Mace, (5) 3-4 Cloves, (6) 1/2tsp Caraway Seed, (7) 2inch Cinnamon stick, (8) 5-6 Whole Black Peppercorns, (9) 1/4tsp Asafoetida.

Other Ingredients: (1) 2 cups of milk, (2) 1/2 cup Fresh Cream, (3) Raisins, (4) Cashew Nuts, (5) Kashoori Methi ( Dry Fenugreek Leaves) , (6) Salt To Taste, (7) Sugar as per Taste, (8) Ghee, (9) Oil.

Making Time Of NAVARATAN KORMA(নিরামিষ নবরত্ন কোর্মা):

Preparation Time: 20 minutes

Cooking Time: 25 minutes

Total Time: 45 minutes 


(1) Firstly, take a blending jar and add the poppy seed, melon seed, cashew nuts and with some water blend it to a smooth paste and keep aside.

 (2) Again take a blending jar and add the tomatoes, green chillies, ginger and make a fine paste and keep aside.

(3) Heat some Ghee in a wok. Add some cashew nuts and raisins and fry them on low flame till it become golden and keep aside.

 (4) In the same Ghee add the paneer cubes and sauté lightly and keep aside. 

(5) Now heat some water in a big pot. Add the sweet corn, beans, potatoes, cauliflowers, carrots, green peas. Add 1tsp sugar and boil the veggies for 5 minutes on medium flame. Take Out the Veggies after 5 minutes and keep aside.

(6) Heat some oil in a pan. Add the bay leaf, dry red chilli, mace, green cardamoms, cinnamon stick, cloves, black peppercorns, caraway seed, asafoetida and sauté for a minute. 

(7) Now pour the tomato paste and sauté for some time. 

(8) Then add the coriander powder, cumin powder, black pepper powder, salt to taste, sugar as per your taste and sauté. 

(9) Now add the boiled veggies and mix. Fry the veggies for some time. Then cover it and let it cook for 5 minutes on medium flame.

(10) Open the lid and add the capsicum, cashew nut paste and mix it properly. 

(11) Now pour the milk, give it a stir and cover it. let it cook for another 5 minutes. 

(12) Open the lid give it a stir. Add the paneer and mix gently. 

(13) Add the fresh cream and mix. 

(14) lastly, add the fried cashew and raisins, 1tsp ghee, garam masala, kashoori methi.

Cover it and give it a standing time of 2 minutes. 

Your NAVARATAN KORMA/MIXED VEG CURRY is now ready to serve.
